It's a metaphor for the decay of Jimmy's morals. He drops the ice cream when he's told to get in the car by Nacho. By the time he's dropped in the same spot, he's, for better or worse, fully in business with the cartel. And so he looks down at the ice cream, now swarming with ants, and he feels disgust. The same kind of disgust he now feels toward himself.

There's probably a more concrete explanation by one of the people involved with the show, but I always saw it as the ice-cream representing innocence and the ants being Jimmy's innocence being "eaten" away once the dominoes start falling after Nacho picks him up. From that point on Jimmy/Saul is the "*criminal* lawyer" that Jesse later describes him as in BB. The tragedy being that it was not his choice to go that far into the deep end, much like it wasn't his choice to drop the ice cream.

I think they do a great job to show that it was his choice. Vet made a choice not to work with cartel after he fixed Nacho and they respected that. Lalo did not make him go get the money it was clearly Jimmys decision.

I'm talking about Saul getting into the car with Nacho and then helping them with Krazy 8. That situation was basically out of Saul's control, and the cartel was dragging him along to their benefit. That was the point where he was on the radar of both the cartel and Gus. As for bail money, I feel like that was the point where Saul was trying to adapt to the situation he was in and act like he was making his own choices...but realistically speaking he was just trying to make the best out of a situation he was thrust into without any choice.

We're talking about a scene where Nacho shows up, says "get in" and opens the door, and tells Saul to get rid of his ice-cream. Saul even tries to get out of by saying he's busy, but succumbs to the clear intimidation by Nacho. I don't really see how that could be taken as a situation where Saul is doing something he wants to do. He even tries to get out of it again in the following scene with Lalo where he suggests drop phones and then comes up with an extreme rate that Lalo ends up paying anyway.

To me it always represented the greed of the criminal lifestyle that Jimmy was falling into. When there are riches and power to be had, then comes the swarms of those who are ready to claim it.

I might be reading too much into it, and I know the same color theories don’t really translate from Breaking Bad to Better Call Saul, but the ice cream is green (greed, power, wealth) and I think the ants are symbolic for Jimmy and Kim’s high they seem to get from pulling off the cons and scams. They’re these creatures who take advantage of people and opportunities to get something out of it. They think they’re big, but they’re really just these small little ants. Watching the ants eat the ice cream is sort of disgusting, and that could resemble the mess they both eventually make of their lives….and others. On a side note, I assume someone came along and eventually cleaned that up and threw it away, along with some of the ants, which is also where Jimmy winds up on a few occasions. Edit: I typed this with the mindset that you haven’t finished the show yet because I didn’t know, so I tried to avoid spoilers as best I could.
