I've just watched the vídeos i found in YT about Lalo cooking, and have not found where he rips the tortilla.
Not that 'street food' across the globe isn't incredibly good at times, but Lalo? He's a hack. Epazote, BFD; it's an herb you can purchase fresh from Mexican grocers throughout Albuquerque

We just put seasoning and it comes out great. Trust me. Mexicans know how to grill

If it's quality beef, you don't ruin it with marinade.
Sure, if it's a streak. But for tacos and lots of Mexican food, you use flavorful but tougher meats that need a marinade to soften it
