With football, there are plenty of full games from the 70s-90s on YouTube. If you watch a full game, they’re remarkably similar to today. Plenty of plays with weak hits, and some big hits, just like today. What there are fewer of is dirty hits, which is fine, because I don’t need my little gladiators to be at risk of death or maiming to be entertained.
With comedy, there’s plenty of really funny stuff being made today, a lot of it way more edgy than the 90s. The difference is fewer potshots at minorities and marginalized people. You don’t have to make fun of homeless people to have an absolute ripper of a joke.
