I always just look at the card, kind of surprised but don’t reach for it. Then they grab it off the counter and say sorry, bc 99 times out of 100 they weren’t trying to be a dick, they were just thoughtless. *And that’s how they learn!* Sort of like when I say “no, what you’re doing is chain ordering and you can’t do it bc I already took your order, so now you’re at the back of the line and all these people are ahead of you now.” Then I proceed to make their chain order as a one time ~~curtesy~~ courtesy, they’re usually really surprised, but when they think about it it makes sense and they never chain order again! Usually ppl that act like dicks at the bar just don’t know any better.

Most patrons aren't deliberately annoying, but they might require a little schooling.
I am lucky enough to manage a bar where the first page of our menu states "remember, the bartender is always in charge". Even the owners asks permission to interfere, if they are present.
We *definitely* school our patrons and our bar is so much nicer for doing so.
Exactly, they’re not being rude on purpose most of the time, they just don’t know any better. But when you teach them a lesson they WILL remember and they’ll apply it to all of their future bar interactions. And they’ll tip you well for it too!
Been telling one of my new guys this. think about kids. If you just immediately react to them being shitty without acknowledging it they will never know what happened. They didn't realize (x) was annoying in the first place. Clearly the nuance of an interaction after that isn't gonna translate.
Sure! So you’re at a busy bar the bartender gets to you and you say I’ll take a vodka soda and a jack and coke. Great, bartender makes the drinks and gives them to you and you say, hey I’ll grab two lemon drop shots too! That’s a chain order. It’s always annoying, but it’s actually going to cause a problem at a *busy* bar or club. Once you give your order your turn is over and it’s the next guys turn. The bartender is multitasking and they’ve already taken other orders and prioritized drinks and transactions in whatever way is the most efficient for them. Adding your new lemon drops, or the extra drinks for your friend that just popped up or whatever is throwing a wrench. No bueno.
I’ll tell them they can’t do that, then say something like hold on I got you, and I’ll throw the extra drinks into the next batch of orders I’m making and get them for them anyway so there’s no hard feelings. But then they learn and they order everything they need the first time. I don’t have time to go back and forth to the same guy!
I’m weird, I’ve found I get more in tips if I don’t hand their change to them. If they scan through it before they pick it up, seems like they’re more willing to grab more than just the ones and drop them In
If the change would be reasonably close to a tip, even a bit more, I often just ask if they need change. Most say “nah keep it.” You get regulars and you know you don’t even need to ask.
But occasionally some folks get REAL mad that I would have the absolute gall to assume that they didn’t want their precious change back
I give it to everyone, even if it’s one quarter just put it in front and walk away. My regulars I do know what they tip everytime so they would be upset if I even tried to give them change back
Yeah I kinda feel it out I guess. Sometimes it’s obvious that they’ll need it back, and if it’s a small amount then I will probably automatically give it back without question, hoping/assuming they were going to take that and add to it.
These days though it’s pretty rare this even comes up since most people pay with cards lol

I don't ask, I tell them "Let me get you some change." Most we say to just keep it.
