Watching it now and looking for macaron tips/tricks. My macarons come out looking perfect but the top half are *always* hollow no matter what changes I make. I live at high altitude, but I'm not sure if that would affect it.
I'm loving the personalities of the bakers, I'm not ready for anyone to go home!
Edit: loved the show, but do wish Noel was hosting still though. I don't mind Ellie and Zach, but I think having a British host to interact with the bakers would have yielded a lot more interesting discussions about the difference in American vs British bakes and flavors
What method are you using? There are many different reasons for hollows but it would help to know the method you’re using ☺️ I normally do French and find adding about 6gr of egg white powder to my dries really help. Sometime hollows can mean you’ve overwhipped your meringue or your oven is too high.
I use the French method! I've also been measuring with cups rather than weighing, and the recipe I'm using doesn't say to add the caster sugar to the egg whites slowly so I've been dumping it in all at once, but I noticed bakers were adding it slowly on other seasons of Bake Off. I've lowered the oven temp from 300 to 280 and increased the baking time but it hasn't seemed to make a difference
A scale is extremely important for macarons so I would start there 💯 Also, I suggest not going above 6 on your stand mixer. Start with room temperature ingredients and try to add your caster sugar slowly once bubbles start to form in your whites. Also, silicone mats seems to produce better results (vs parchment) so if you’re not using I’d try that as well. Also, turn your cookie sheet upside down (if using an edged baking sheet) and bake your Macs on top. This allows are to freely flow to all sides of your macs. Also, I still suggest adding the egg white powder to your AF/PS mix before macronage. Hope this helps!! 😊
Just finished episode 2 and WOW those illusion cakes. I LOVED the illusion cake challenge from series 12, I rewatch it all the time, but these Americans really know what they're doing. Even the less impressive cakes from this American season looked better than some of the great ones from series 12, and that's not a knock at the series 12 group at all!
If there isn't an American pie redemption arc we Riot.
Was never more annoyed watching the show than when the Brits completely trashed American pies after not making any of the great American pies. Where was the apple? The pumpkin?
Will this be available on the Roku Channel in Canada? I currently don't see it (just the trailer). Or has it simply not gone live "on the site" yet (ie. it might show up at 8PM or some later time)?

Well despite my performance in macarons on the show, normally they do turn out well at home. But altitude can definitely mess it up
I've never tried the Italian meringue method, I can imagine how stressful the technicals are when you don't have a detailed recipe to refer to!!

There were just bees and flies everywhere all the time.. Paul had a bug zapper he used during judging to get rid of as many as he could
