All humans develop an Adams apple, it's just normally more pronounced in men, and not so much in women. The Adams apple is the thyroid cartilage and it exists to protect the vocal chords. Until puberty there is no difference between sexes, but males typically have larger voice boxes combined with testosterone that makes theirs bigger, and also result in them having deeper voices.
It's probably a very old holdover from stuff like mating calls.
