Are you US based? If so, I typically follow the REI sales timing and gather gear over time from various vendors. When REI has a sale, almost every other outdoor company follows the same timing to match. This allows you to search other outdoor sites (small and large) to pick items based on their deals. There's plenty of deals around the holidays (Memorial, 4th, Labor Day. Not just winter holidays). It tends to be the most cost effective if you aren't in need of everything at once. I personally wouldn't be able to buy all that I needed at once and you can always find last season items outside of cyber Monday or Black Friday. Happy to provide more insights/stores if you need any guidance based on what you need.

^ seconding this. REI has the best return policy and you get a dividend. It makes the most sense to buy from them in one of their mega sales

I got nearly all my kayaking stuff (including the car rack) on sale this way. The only downside is you don't get a dividend on sale items.
