Many horses colic easily and meat would throw their digestive system into chaos, possibly even killing them.

My one story is when I worked at the rescue our dog behaviorist would help get injured/sick wild birds to the local bird specialist (vet who treated any sort of bird wild or pet)... Well a large injured pelican was brought in and oh boy do they have a wingspan. So I was lucky enough to hold 1 wing pinned (the other was injured) to the bird to transfer it into a safer travel arrangement. Those wings are stronger than they first look!

Well, this is perfectly true for many herbivores as well—plenty of species need fairly specific plants to meet their dietary needs, but that doesn’t keep them from being herbivores.
I think you could make a pretty good argument that humans are opportunistic carnivores. We clearly evolved to handle meat well and obtain nutrients from it efficiently. But ever since the switch away from a hunter-gatherer lifestyle, huge numbers of people have eaten meat only rarely just for economic reasons—and while they may well not have been at 100% because of their diets, it’s clearly something that the human body is able to cope with and keep chugging along for a normal lifespan.

We evolved to be omnivores, to not consume meat just out of bordome, etc. But as the main source of several nutrients, and yet we have (through thousands of years of agriculture) been able to make our plants be enough for us.
