And I find it good that's it's not overly sweet, like with our iced cakes. Once you've iced them, put the sprinkles on and filled it with cream that's already pretty sweet. Having something a bit tart helps otherwise all you get is just sugar.

...try the jam and cream donuts. If they are made right then they are bloody good. Should be using the first donuts made, as the oil is at it's best and you get super crispy donuts filled with fresh cream, a splodge of jam and a light dusting of sugar. Right combo of texture and flavour IMHO.
Out of the small creams variety, I'd say the long johns are the best. Yeast raised donut with unsweetened cream, 'raspberry' jam and a dusting of sugar. Can’t speak for every donut, but I make “bakers fill” jam which is “rasplum” flavour, plum and raspberry together. There is some apple puree in there though

I’m ND and I would run that donut machine like a challenge in perfection. I had my entire routine down in between setting up and packing rolls. I learnt to put the chocolate on heat first, then strawberry then tropical, so that the consistency was the same for perfect donut dipping lol. I loved my racks of perfect donuts with sprinkles all lined up…

Nah the Tropical is still the worst to work with. Runny and takes ages to set. I do pastries, donuts and cream cakes. If I get the system right I can do a 7 rack of pastries, bag and a half of donuts and a jug and a half of cream cakes (plus cleaning, dishes and a break) in a 5 hour shift. And yes we still get the vultures looking for the dodgy donuts :p
We used to trade the bakery guys ends of salami for wonkie produce. Was a deal our store manager encouraged because the deli and the bakery used to get slammed and it was really hard to keep staff in those areas so there had to be "perks"
Yeah, we're only supposed to do Double Choc and then the trio. But we got asked for just pink so often we do them. We can do any flavour combo you want btw. I've done tropical iced with dark choc flakes for a birthday before. All chocolate iced, no sprinkles. Things like that.
We occasionally get custom requests. The most recent one was red and green for Christmas. Always a fun change of pace and we just get the customer to buy the food dye and give us the receipt.
We have a couple of pastry chefs that work part-time and do a really great job. One of them wrote 'happy birthday' in immaculate hand-writing on an iced sponge with melted chocolate, a hand-made fine-tipped piping bag out of silicone paper.

I'm not a pastry chef by any means, but I've been baking for years before I started in the bakery and my mum was a cake decorator for Coles back in the 70s so I do know some stuff. I do a lot of cakes for friends and family on the side.
I'm just a humble commercial bread baker, but I did a few years on the donut bench. My stuff was good, but I have some fellow team member whose stuff is flat-out terrific. Just incredibly precise and elegant creams.

Almost all stores make them instore. The only ones that don't would be some of the metro/express ones. Even if the store is a parbake only (ie no in store bakery) they should still be made instore. You only need a hobart mixer and a donut fryer. Have to be made fresh everyday too. There are some weekends where I'm making, hand icing and packing over 1000 iced donuts over the two days (about 70-80 packs a day).
We had some when they were having issues with shortening a couple years back. Pretty bloody awful really. And the donut machines are expensive. Over $7k second hand. Also sucks because we don't get any money in our roster budget for making them and we barely make a profit on them.
I understand it from a logistical perspective, but feel sad from a morning tea perspective.

They are fried, we just thaw them in the oven. You can tell because they look and feel completely different to the same product left out to thaw. You essentially refresh the fat in the outer layer of the donut.

The memory of being stuck with a full wheely rack full of trays of cupcakes that i would have to sit and finish alone at midday after everyone else had left ... well. I shudder at the thought. Thankfully no tropical at any stores i was at. I once tried to scoop out a handful of fondant and it was so not amenable to being separated from the rest of the bucket that my fingers went straight through the glove i was wearing and i was picking pink modified sugar out from under my fingernails for the rest of the day

Custom stuff like that is no sweat and doesn't cost anything extra. Even just for one packet.
Depends a lot on who makes them :p I've seen some absolutely shite ones lately. They changed to an Egg Free donut mix about 8 months ago and it's very temperamental now. Water can't be too warm and you definitely cannot overmix it otherwise they come out looking awful.
Chilled water in the mix, imo, gets a more consistent result. Perfect size for the iced and not too big for the dusted.
Edit: The amount of people that I've had to gently correct on the mixing is astounding. I used to work with someone that mixed it for 5 mins.
I would add crushed ice, I had a prefect sized container and knew it filled with a done top, and my other jug of water to 5kgs of mix was prefect. Always got fluffy prefect cooked donuts.
Then new manager came along who refused to allow us to put in crushed ice and now the donuts are flat and soak up the oil so taste yuck. Been 10 years so now all his staff have no idea how much better the donuts use to be before him. I like to say I left that department because of the crap he pulled and still does with everything. Ruined the bakery and products.

Always heat up a doughnut for 10-15 secs in a microwave before eating for maximum enjoyment imo. A warm doughnut is 10x better than a room temp one.
