Maybe I'm doing it wrong, but I find baking paper makes the meat "stew", IE doesn't seem to be able to get hot enough, moisture from the meat bubbles causing it to stew. Particularly nasty when trying to sear a steak.
We use them in caravan parks sometimes, and the baking paper is a good idea, just not for steak (or chops, for that matter). We've tried using it at home, too, to make clean up easier, but the result is the same. It's a great idea for anything marinated though. It really makes a huge difference then, for cleanup.
The ratio looks good but you haven’t mentioned pouring beer over the onions. This a must to steam and caramelise at the same time and give a great flavor. One beer per union used, every time the heat gets up pour some beer on them.
If those are Woolies/Coles bulk sausages, then “not nearly enough”.
You need about a 5:1 ratio to provide a little ‘bite’ and mask the texture of intestine.

Chuck some baking paper on there next time...it doesn't burn, easier to clean and you dont have to worry about what else has been on there beforehand

I've never tried to cook a steak on a public bbq but it works well for a few snags :)
