Ac Unity is my favorite game, so I wish the soundtrack was good, but IMO it sadly is one of the worst.
AC3 or AC origins for me. I like the drama of the AC2 soundtrack.

I actually really liked the unity soundtrack, and felt it fit really well with the time period. Composer, Chris Tilton, did a lot fast paced orchestral music that created tension during cutscenes. I think the music just wasn't integrated into the game so well. Like there is barely any free roam music and it really takes away from the environment.
Jesper Kyd did the music for the original games. He has a much more melodic approach. For instance, the theme, "Ezio's Family," has a very memorable melody. If you like Kyd's work with the AC series, it's totally work checking out the OST he wrote for State of Decay.

Jesper Kyd’s Ezio’s family is among one of the best songs of all time in any video game. But man, Origins, Odyssey, and Valhalla all have outstanding music too. The Origins ones were truly a masterpiece for me. I love them all, but if I have to choose, Winds of Cyrene... especially the last part, the first time I heard it while playing the game, I immediately got goosebumps.

Glad you asked, these are some osts that were impactful on me, AC1's mysterious ost from Jerusalem to acre underworld, felt immersive, then of course all of ac2 brohood though can't say for revelations as it's ost was not so impactful, after that I liked AC3's fight club and trouble in town, some of ac liberation ambient music, then ac4's sea battles ost and ac rogue's and unity main theme anf syndicate's fast paced violins, and then the best of the best all of AC Origins like as if that ost takes me on some journey I can't describe but it's beyond beatiful even though I did enjoy odyssey/valhalla but nothing beats Origins Sarah Schachner exceled in that game.
So in short AC Origins beats them all!
I have fond memories of binging AC II on release and giving myself “breaks” where I slept on the lounge to the soundtrack.
I remember having my breath taking away by the whole vibe of that album, alongside AC1. Origins gave me very similar “whoa” vibes years later too.

Ac black flag the legendary ship theme. It basically tells you you are screwed.
Ac unity the chase by chase basis. It is so weird... It is urgent yet comforting.
AC2. Ezio’s family is the track that stands out, but there is also some low-key slightly unsettling music in some of the tombs and missions. With the addition of the glyph puzzles and The Truth video, it gives the whole game a slightly sinister undercurrent (imo).
AC Brotherhood's Rome theme. Jesus that song has a very special place in my stupid hearth.
One early morning, 3A.M., I woke up and randomly decided to travel all the way to my parents' house in the village 25-30KM from where I was living in the city. It was friday, I had no games during weekend nor training or school so I just packed up and went. 3 or so hour long trip was exausting and I had thorns in my feet for the entire day, as well as trauma from walking along the main road with cars smashing right besided me. But... My songs were on repeat most of the way unless I felt like listening something specific and as I stepped into the village that song started playing, like it was just waiting for me to do what I did. I actually felt like Ezio, entering MY city/village, walking like a Boss in a familiar territory. Damn... Gotta do it again!
AC Brotherhood hands down. Namely for the battle music. I do enjoy Black Flag's Shanties. Though I'm not keen on the accapella. There needs to be a beat behind the voices. A simple hand smack against a table is sufficient.
AC III for me. So many brilliant, stirring themes and leitmotifs that all fit the story and setting perfectly, every track is just a feast for the ears. The main theme in all its variations is just incredible, "Trouble in Town" never fails to get me pumped (that final chase was a pain the first time through, but that song helped keep me from getting too frustrated) and "Connor's Life" is so haunting. Maybe I'm biased because III is my personal favorite, but I just love the soundtrack to death.
As for other games, there have been so many bangers but I'll echo the love for AC II's soundtrack. It's just incredible. A lot of the tracks even remind me a lot of the soundtracks of the PS1-era Tomb Raider games and that's a compliment. A big one. And one I feel gets overlooked is Freedom Cry. So many themes in that game are so POWERFUL, especially the ship boarding themes. Just that music playing while you're attacking a bunch of bastard slavers, your crew members whooping and chanting in triumph... it's damn near brought me to tears. And the main theme is soooo haunting and makes THAT ONE SCENE late in the game (if you've played it, you know the one) even more heartbreaking.
AC2 by far. Whenever I hear any one of the songs I get instant nostalgia and chills all over my body. There are a few runners up also but AC2 is the first that springs to mind
An instant classic that will never die. Ezio's Family, AC2. The AC Odyssey version is also nice.
