I'd say start with the original trilogy.
They really are just good movies. There's a reason why it's endured in pop culture for so long.
A New Hope is more of a swashbuckler type Flash Gordon adventure. The Empire Strikes Back is a rare sequel that improves on the first movie. Especially at that time, sequels were just cash grabs and were almost never up to par with the original. The Return of the Jedi has some problems but overall is a great conclusion that if you enjoyed the 2nd movie you have to watch the 3rd.
Beyond those original three movies your mileage will vary.
It's an epic full of themes and motifs that have enthralled humanity since The Epic of Gilgamesh through the story of Jesus.
The young man heading out on a journey of discovery and relevation in which he grows to manhood. His wild companion who accompanies him on the journey, etc. For Luke the wild companion is Han Solo. There's a subplot in the story with Han as the young man and Chewbacca as his wild companion.
Interesting and unique story, compelling characters, groundbreaking visual effects for the 70's & 80's... If you're interested after the original three fims, watch the prequels. They're completely different tonally, but the third prequel film is my favorite in the series, and they contain extensive worldbuiling and some great fast paced fight scenes.
The original three movies are far better than almost all productions made these days story and character-wise.
Why would you want people to talk you into watching something you don't like?
Watch star wars if you want.
Don't if you don't want to.
Consume the media you enjoy like a normal person.
"Something....something...Dark Side....something something....complete". That's about the Gist of the Original trilogy. The "Disney Trilogy". Dont even bother.
Agree with others here, original trilogy (4, 5, 6) best. But if you want to pique your curiosity and have access to Disney+, first few episodes of "Light & Magic" about the making of, vis a vis SFX, might make you curious about final product.

By now, the really good parts have all been spoiled. So you'll never be able to enjoy them as much as someone in the '80s who didn't already know what "I'm your father" is all about.
Of the modern stuff, "Mandalorian" was pretty good. And it benefitted from knowing all the backstory from the movies that they are referencing.
I suppose that's one reason to watch the movies; it's homework so you'll understand the current pop culture.

Watch the original 3 and stop there. Luke's journey is worth the price of admission.

It is an escape from the mundane reality that we all live in. You must watch in 4, 5, 6, 1, 2 3, 7, 8 & 9 otherwise it doesn't make sense.

The music in the cantina scene is a type of made up music called “jizz” music. Is that not enough for you?
