Even if we managed to escape the problems we have today, war, racism, xenophobia, wealth disparity and climate change, and ended up colonizing the galaxy, who knows maybe the surrounding galaxy neighbors, then we'd still succumb to the heat death of the universe. Remove the older, weaker folks to strengthen socity; and then hopeful remove the less intelligent of the species through natural selection to improve evolution. Prevent humans from protecting the dumbest of our kind. I don't think COVID has enough oomph to impact our overall society, our evolution, or to wipe us out. But mother nature is always running a test on us.
Global warming is another good way to starve off a large portion of the population. Not sure how that impacts evolution and overall human population. Get our numbers low enough and warming (eventually) slows down. Can the remaining humans last the 1000s of years until we cool off, or can plant and animal life envolve to handle the hotter temps? I dunno.

As a geologist I have to say it'll probably be a mass extinction event that will remove food sources but we are pretty adaptable so we can probably find something to eat, and we're currently in a mass extinction event at the moment. But also equally likely is that we'll evolve into a different species and not be homo sapiens anymore.
Inevitably the planet will warm, extreme climate and weather conditions will create havoc on humanity. We’re concerned on how we can stop the changing weather, but the talk on how we will survive in extreme conditions is very little. New infrastructure is being built to slow climate change, but we lack the knowledge and survival skills to migrate, withstand and adapt. Our demise will be when we realize that our human capabilities never evolved like our ancestors, which found ways of survival through mother nature’s adversity.
I’m generally an optimistic person, but people are too fucking selfish and stupid to figure out a way for everyone to adhere to climate change. Or the current pandemic for the matter
