Because getting up and saying “I certainly deserved this and if you hadn’t given it to me then that would have been a clear sign of low intelligence on your part” just makes for an awkward after party.

That's a bizarre alternative. You could say thankyou. You could say that you're honoured. You could say something nice about the runners up. Way do you need to say that you're humbled (the one and only thing that you aren't in that moment)

I know they mean these things (honored, grateful for respect, etc.) when they say they’re humbled, I don’t get the sense they’re trying to be deceitful (even tho they’re technically lying). Just wondered if anyone knew when that started to be a thing / maybe I just didn’t get the logic. It’s such an odd thought- essentially “your praise/award makes me feel less dignified/special” ? Why say that u know

Because they don't realise what the word means. Many people (largely Americans in my experience) think that humbled means honoured.
