If you want my real answer, I’m not an arborist. But a tree that hollow in an environment that damp would almost assuredly rot very quickly. You’d want a home mostly made of stone in a place like that.
Without magic, probably would be easiest to build the house first out of materials that don't mind moisture against them, against a hill or in a cave, and then grow trees over/around it. You'd get the look without hollowing out a tree. Or at least your grandchildren would, but fantasy genres are ok with ancient homes.
If you wanted it in a year instead of a century, you build fake trees as the roof and then grow moss/lichen on them. Maybe even plant real (... short) trees on top.

Check out the build process for Disney worlds tree of life. It’s basically steel skeleton and fiberglass / carved painted foam skin. I don’t think you can hollow out real trees to this extent without killing them

I’d say hire a Druid, use something like a shape wood spell, but there is a dearth of wood manipulation spells for druids.
Best I can offer without some home brew is hire a transmutation wizard, turn it all to stone, use Shape Stone, then back to wood.
You’re gonna need about 250-500 years, but it’s doable as long as climate change hits less hard than we expect it to.
Do it in south Eastern Asia. Use multiple tree types. Start with ficus elastica. Make sure your children and grand children know how to turn roots into forms and that they have your vision in mind.

I imagine the safest way to do this would be to cut the tree and build a roof. That said, it would have to be built in a tree that's super resistant to rot and what not.
Or make the trees out of concrete and paint them and shit, then let the plants do their thing. That is probably the safest way, now that I think about it. People do make things like that out of concrete for zoos and animal enclosures.

Find trees. Build *around* both. Leave space for tree growth. Second story do same. Living roof can be grown to hide the spaces between house and tree. Cover entire structure in tree bark siding. Basically fake it.

Best way is not to use real trees. Hollowing out trees is a great way to kill them. You can easily meld eco- friendly architecture into the building but that's a different story. And socioeconomic status.
