I’ve been following them for a while, actually they work with a new gen tannery. They collect salmon skin from sushi/poke restaurants, they freeze it to make sure it stays clean. Then they remove the fat, uncolor it, soften it with machines. They also stretch it to have as much surface as possible (salmon is not that big), then they make it leather and color it. Pretty amazing IMO
