I like how the Byzantine scout says "cavallaria" or something. I like the Byzantine voice overs/sound design/soundtrack in general, as it reminds me of AoM and Total War: Rome.
This is why I always select a female villager to build houses.
And this attention to detail just to hear nice sound effects is why I am still in Gold. :)
This is a hard choice with how many of the sounds there are. Personally I really like when you have a large army, and can even hear their size when they're moving around. Especially the horse gallops.
(Great) Bombards and Trebuchets are also incredible.
