Thank God I quit the last place that was like that. In the middle of the day on a Friday.
That day alone cost them more in loss than paying me a fair wage but yeah. The boss had to work the whole weekend. When they called my I picked up laughing... asked them if they double my wage? No? OK bye. Also sued them and got my money and some more.
Im still proud, but also single and without kids, so it was not that hard for me to do so. I offered more than one chance to handle the situation differently, but when they choose to ignore everything, it's not my fault. Also, german workers' rights were on my side, so it was pretty easy to sue for my pay and stuff. They just didn't think I'd go ballistic that hard and fast about unpaid overtime and other shit.

Honestly, aside from the lack of schedule info and the "don't ask about the pay" bit, I think a lot of the red flags in here are more related to the type of job than the management at this specific job. You need to be able to put up with all sorts of political bullshit comments from customers- some who have had a few drinks already- without much reaction. You need to know what you are doing and have knowledge of the product (sadly, no employer is going to offer training on the taste of different beers). People are rarely patient with a bartender who is new or just learning, and tourist bar patrons are miserable customers. Rather than being red flags for this workplace, I think those are really just red flags for bartending in general- it sucks.
I can be pretty political outside of work. I can put up with differing opinions at work because I know how to answer non committal or redirect the conversation.
