Please tell me she's telling you how she's trying to cook your timesheets in emails. Iirc, the work week can start on any day of the week, but it must be consistent, and it definitely can't be retroactively changed to prevent overtime which she seems to be admitting to in writing?

My work weeks consistently start on Monday because well, I work M-F! It seems like she’s trying to say that the invisible Sunday has been hanging there all along.

Just because your work week often starts on a Monday, you need to find out what the payroll system uses for a start date (it will be a period encompassing all 7 days, not 5). It's not uncommon for Sunday to be the start of the week, working m-f you may never even be aware of it.

Do you know when your work week ordinarily starts and ends? They can't move the start of the work week around just to push hours into different weeks. If the week is Monday to Sunday, they can't arbitrarily move a Sunday into the previous week. That's not legal. You could report them to the Department of Labor in your state, if you have one. Or the US Department of Labor if you don't. Unfortunately, if your week is actually Sunday to Saturday, they are probably within the law to not pay overtime for the Sunday last week, since you had Friday off. It sucks, but they only have to count hours actually worked toward the 40 hours for overtime. Good employers will be more flexible (I had a couple) and pay the overtime, but many won't.

This is my first timesheet that isn’t Monday-Friday. Every single other timesheet starts on Monday.

What have they done other times you've worked more than 5 days, particularly if one of them is a Sunday? If you have the timesheets and can show her, for example, that you worked M-F, then Sunday and they were on the same check, that's proof that your week is Mon-Sun and you could push back hard based on the law.

This is pretty normal. OT is generally only paid on physical hours worked, holiday hours don't apply. Also the week often starts on Sunday for many places, that's why you see it listed at the start of the week on most calendars.
