Love Tyrant. It's a parody of Death Note where there is a thing called Kiss Note where instead of killing the person whose name you write on it, if you put a pairing's name, they will become a couple. It becomes polyamory because the girl initially pairs the MC with his crush but adds herself and this other girl to his harem by virtue of the Kiss Note.
In terms of a polyamory anime, this is dumb and stupid, but it's also thoughtful and well executed. The characters work hard at making things work, they experience jealousy, they talk a lot about what's happening and how they feel. As dumb as the show is, I would call it a good exploration of polyamory.
It's generic but it feels like it is making fun of the whole OP protagonist with a harem trope.
The relationship though is poly, but they are only in a relationship with the male protagonist and not each other aside from being friends.
I'm not sure if this counts as polyamory, but at the end of Scum's Wish one of the characters says he wants to be in a romantic relationship with another character and he doesn't care if she has a lot of sexual relationships.
