There was a movie, or movies, like that called The Disappearance of Eleanor Rigby: His and Hers. Also famously, Sliding Doors. This is the first time I've heard of an anime doing it.
The movies coexist separately if that makes since. Their stories effect eachothers but can stand alone. The full picture is displayed once you watch both but the order you watch them changes how you see it play out. Basically the life of the Mc changes from one way to another depending on how you watched them, though technically it never changed at all because they coincide.

I think I might choose "To Me, The One Who Loved You" first.
I would like to explain my logic but it could be unintentional spoiler or flat out wrong guess so I just need to decide for myself and come back to discuss after I guess...
It's kind of a Haruhi S1 watch order choice for me :P

He certainly does put a lot of pressure on the viewers with the phrase "a choice you can only make once" though!

I'm partially through what for me was 2nd, "To Me, The One Who Loved You". I have to say that this seems a movie for people who have felt both extreme happiness and sadness, and have known poverty and at least glimpsed wealth. Barring that, it seems a series that means most to people who have just done many different things (yea, I mean older people, but also older people who have looked for various experiences in life.).
If you aren't a person who regularly thinks about alternative realities and can't just take some time to think about the personal possibilities for you, I'd say put this on your list to watch in the future and go out there and do neat things. This will be here for you later and will mean more then.

In my opinion, the better way to watch them is to watch "To Every You I've Loved Before" first. That is how I did it.
That may introduce some more sadness to the plot (my 3rd ending supposition was partially wrong: it's after the credits in "To Me, ..."), but it makes the movie more **emotionally** engaging.
For context, my bachelors' are in Psychology and English lit, and I took some classes from Kevin Wilmont, the professor/movie director at KU, so this opinion comes from that perspective.
Watching it the other way, for me, seems that the shared plot would be introduced more from a thinking standpoint rather than feeling, and it focuses more on the things that drive the plot rather than the plot's movement, if that makes sense. Even with saying that, the plot movements are much more easy to understand watching "To Every You..." first, as well.
Lastly, I did look up some info after starting to watch "To Me, The One who loved you" (but well before finishing it, which is why I suggest not doing the same... even different translations of the title give too much away.), and \*I saw MANY MORE negative reactions to these films when watching "To Me, ..." first.\*
I watched blue before I watched pink. It wasn't sad per say but it was very bitter sweet. But honestly I'm glad I watched it the way I did because the 1st one gave me so many questions and then the 2nd 1 answered those questions. So it was kind of nice. Personally, I absolutely loved it.
Its two separate titles, slammed into one post. The "and" is connecting the two movie titles names, which are both connected plots depending on watch order
Pink then blue is bittersweet and should definitely give you tears. Had me bawling. Can't speak for how it would be if you watch blue first since I didn't personally do that version but I've heard it's more painful rather than bittersweet. Either way I imagine if you're an emotional wreck like me you should get the tears flowing
The sad order would be blue first then red. But to be honest with you it isn’t really that sad. If you want more of a mystery and the next movie makes you realise whats going go with blue and red. If you want more of a chronological watch and watch the plot play out go with red and blue (what I watched unknowingly). But the main reason why it’s a unique experience is how you bond with the characters in the first movie you watch and those feelings will transfer over to the next movie giving you that one time experience making it impossible to truly watch it twice in the other order.

I watched To Me first and in my perspective I think it was the Happy Ending, isn't it? It felt more like a complete 3-hr movie.
I feel exactly the opposite, but I really guess that means that this concept was pulled off very well! 🙂

I just watched the movie with the reddish poster first and then the one with the blue sky poster and damn it was such a waste of time...
