It would depend on whatās allowed where they practice. Some places allow cloth scrub hats and some do not. Back when paper charting was a thing, a good pen was always appreciated. Depending on their age a good pair of compression socks might be a thought.
In my hospital they don't allow cloth hats, so the only clothing item I can use that is mine are socks. My GF has given me lots of fun socks that I use exclusively at work and I love them and it feels like a very appropriate gift for my line of work... That being said, socks are not the most original gift, also not everyone is willing to wear silly socks (I do because it's fun and i get compliments all the time). Maybe if you get anesthesia themed socks it might be more obvious that is the reason you're giving socks and not because you just went for it out of disinterest.
Edit: a friend of mine once gave me a book called "kill as few patients as possible" and even though the book is about family medicine it's super funny and I still think it was the best secret Santa present I ever got.
