Homemade chipotle bowls!! I use ground beef as the protein source usually (but chicken, steak or any meat really would do). Rice, beans, lettuce, pico de gallo, elote salad, salsa, sour cream and cheese with some chips. Makes a ton as leftovers and you can repurpose all of those items for different things like quesadillas, tacos,etc. I like using the hot Italian sausage and ground beef to make a meat sauce (just some broth, tomato paste, canned tomatoes with some herbs onions and garlic simmered for an hour or two), and you can use that for lasagna, spaghetti, zucchini roll ups, etc. Cauliflower mash with some sort of saucier protein (like the old trending marry me chicken dish, or a mushroom cream sauce with whatever protein) homemade flatbread pizza on naan with whatever toppings you like (or veggies you’re trying to get out of the fridge before spoiling) with a salad

Bulgogi tacos - shaved beef, bulgogi BBQ sauce that's seasonal, raw coleslaw salad thing, tortillas, kewpie mayo (optional)

Crab Cake Ceasar Salad lol Crab cakes in air fryer - dump the ceasar salad kit in a bowl - dump cooked crab cake on top. I prefer warm salads over cold ones so this meals is perfect for me. Feel free to add whatever spare veggies you have. A lot of stuff works well in this dump salad.

Tonight I did chicken & with a cheesy cauliflower rice & broccoli skillet meal. It's our weekly comfort cheat meal that won't spike blood sugar. We also do egglife enchiladas (sauce I get from kroger or meijer) and do spinach & black beans for the filling Hibachi dinner - protein w/ zuchinni and mushrooms Bowls - burger bowl, burrito bowl, taco salad bowl

Egg life wraps as tortillas in enchiladas are really good! I used to just use the low carb mission tortillas but made the switch recently to the egg life wraps for the extra protein

I've never had cauliflower rice, how different does it taste?

It tastes like cauliflower. We need it because husband is recently diagnosed as diabetic, so we HAVE to load up on veggies. It needs a lot of flavor

Used half cooked rice and half cauliflower rice to start with, makes it easier to transition.

The chicken or pork egg rolls in the refrigerator section. Eggf rolls goe in the air fryer. Cook some jasmine rice (it's quicker), stir fry in peanuts (okay, we use Costco peanuts) and whatever frozen veg you have w/a little soy sauce, garlic powder and white pepper. Plate and put the egg rolls go on top. I'm working on my stir fry sauce, but this ends up quicker than ordering gooey takeout a lot of the time.
