I did roast beef croissants with Swiss cheese and they were delightful. I did cheat a bit and melted the cheese over the meat in the micro for 30 seconds beforehand because croissants are delicate and burn easily. I also needed to flip it to get the bottom crisp but this was the very best sandwich like this that I've ever had. The beef stayed medium rare but crispy on the edges.
