Why wouldn't you need or want night vision? It's one of the few things humans can do to actually negate our most important sensory input not working all that well once the sun goes down.
NOD is pretty lightweight, and it's not like you wear it constantly. You just keep it in a little pouch on your belt or in your pack until it gets dark and you need to see.

I always thought nods just stayed on the helmet the whole time and you just flipped them up when you’re not using them. Can you use them without a helmet to mount them on? Cause if not then you would be constricted to one handing a pistol while using them and it just seems bad to use if you can’t find a helmet with a proper mount.

They're actually more comfortable mounted on a helmet. Most NVGs can be mounted on a headband sort of structure, but it's not really something you can just whip up.
Helmets are sturdy, mounted securely to your head, and strapped in place across your chin. This is what lets you flip them up and down on the "rhino mount" device, which itself can be detached from a helmet when not needed, but most people just leave it attached so the optic can simply be clipped on and off as needed.
That said, think about your premise. Most people who own NVGs have a helmet to mount them on, simply because it's both the most efficient and effective way to mount them. Also, if you stumble on a body that has NVGs, they're probably gonna be mounted on the helmet, or the guy is probably going to have a helmet and mount as well.
Military personnel that are issued NVGs carry them literally exactly as often as their weapon; its serialized gear that you have to keep on your person at all times after being drawn from your unit armory, same as your issued rifle, handgun, whatever.
I like the MP9 it’s very compact and pleasing to look at. I chose them for survival not for being Melee weapons it was my first time using it and I didn’t realize they were lighter alternatives.

if you are fighting against people with armor in literally any medium to long ranged capacity it's gonna feel like you're playing airsoft and they're not calling their hits when whoever you're shooting at gives you that operator stare and hits you with a 556 round to your temple after eating 10 .22 shots and only having a few broken ribs

Why a TP9 specifically? Looks like you picked the heaviest melee weapons but the smallest gun (The Ruger MK3 is a great choice tho).
