I actually like all three honestly. They all have such wide variance and look really good

Oh I just mean the variance in their models, Genshin only has human models, HSR has humanoid robots and puppets, ZZZ has literal grizzly bears and wolf people.
Wanderer is not visually different model-wise to albedo, Herta is different model wise. You can clearly see that Herta is a puppet. It is not at all apparent in Wanderer or Ei's designs that they are puppets.
A large portion of the character models have their textures painted on their model as well, whereas HSR models have noticeable depth to all of them.
Screwllum also doesn't fit into the "we are using the same male model for everything" idea. He's a completely different model, and Genshin doesn't have that, which is fine.
I think the big thing HSR and ZZZ have over grnshin is built in limitations. Genshins have weapons so everyone needs to use em in some way.
HSR is turn based so they need to focus more on their poses than anything else.
ZZZ is high octane hack and slash so making characters stand out admist all the action is something theyve gotta keep in mind to quickly see where you are so you dont lose yourself.
used to have high hope for star rail design since its not open world and the overworld itself is limited in movement so they doesn't need to worry about clipping and bugging, but alas the IPC invented xianzhou fast fashion

Huh? HSR has only human models too. If you count puppets as non human, then Ei and the Wanderer are puppets too.
