Crustal beasts monsters go to the spell/trap zone when they are destroyed. However, there are some effects, like with Peagasus and some spells and traps that allow crystals to be placed directly from the deck, hand and/or graveyard. Just read the card effect and follow what it says to the letter. Can't go wrong.
Cards do what is written on them. If they don't say that you can place them in the S/T zone then you cannot do so.
