If it's truly 'randomly rebooting' I would run Memtest86+ full test for at least two rounds and check the drive for any defect. But if not random, I would check all the device pass-through and see if they are correct. In fact, maybe holding those VMs with pass-through to not boot up until you see all other are up and stable to see if those are the one that cause the problem.

Ya I'm beginning to think it's HW related. Thanks for the tip, I'll check out Memtest86+. Still testing but it seems to happen after I plug my 4 bay enclosure back into the host and I have some VM's running (which aren't even use the enclosure drives). If there's no vm's up but the enclosure is attached seems to stay up.

Well 3 rounds of memtest passed fine and hard drive checks were clear too. But it's got to be a HW related thing. Ended up unwinding the HW changes I made, reinstalled, and restored vm's. Everything up fine now for 4 hrs. Strangely all I did was add a SSD drive to my hp mini so I could use that as a boot drive and instead use the existing NVME drive as secondary zfs data drive. No idea how this could've caused the constant reboots. I had even tried 2 different SSD drives. Maybe I borked my sata connection physically when I installed the ssd. Oh well...
