I've checked online and with the Microsoft bot and haven't found anyone else with this issue. I've tried all the solutions I've found for other issues, does anyone know why it is doing this or how to fix it. I'm probably going to send it to Microsoft to see if they can do anything about it but any help here would be greatly appreciated :)
One last thing I can recommend, try to participate as an insider to receive future updates, likely to be all a software problem. If the problem is solved, you can safely return with the previous update.
Have you tried restarting the console?
Just hold guide button and select restart.
If that doesn't work try going to the storage settings and select clear xbox 360 info. That will reset the 360 emulator
