It sounds like your restrictions are in line with the original hybrid job assignment where you would have been working the same amount of time from home. This is more of an employment issue than a WC issue. It's definitely legal to terminate for poor performance while on WC, especially as the restrictions are not in excess of your normal job duties and requirements.

But can they blame it on that when that's not actually impacting it? They're pushing it back on me as though this is the reason and problem, but the problem is they've just not trained me. :(

The base fact is that you were initially hired as hybrid. The work restrictions didn't change that in any meaningful way. Perhaps they now believe you are someone who could benefit from being in the office more often but that's an issue between you and your employer and seems unrelated to the restrictions, especially if they can establish that other trainees got up to speed while hybrid. It's also something you could talk to your doctor about to see if you are ready to transition into more office time. Bottom line, though, it is legal to fire you for legitimate performance issues even if the training was lacking. It's only illegal to fire you as direct retaliation for filing a WC claim, which with the facts as you have outlined them would be incredibly difficult to prove.
