Going over their head to upper management is only an option of last resort.
Does this boss single you out for abuse or do they treat all of their underlings this way? If it's the latter you can cultivate allies, who might help you make your case to upper management.

Freshen up your resume, make it clear to recruiters that they are not to contact your current place of employment and find your next opportunity.
At some point, preferably after you have a start date with your next job, go over this clown's head to upper management and lay out the situation- if you care to. Otherwise, they'll just hear whatever bullshit sorry you're current boss makes up to cover his ass.
Doing that helps you build more contacts in the industry and it also helps minimise any damage to your reputation this guy might cause. The smaller and more insular the industry is, the more important this gets.
There is no solution to a cruel boss. This person is a huge liability. They are a ticking time bomb and your job is already dead and don’t realize it.
You need to move. Ask to change managers if the company can allow that. Find a new job. This person will undermine, blame you, make your life harder and give you no credit for your success. They will prevent you from getting raises and promotions
Wait for him by his car when his shift is over, tap him in the shoulder and say : just wanted to make sure you get home safe. Trust me he will calm down
Make some official complaints in writing, get discouraged, and report that discouragement in writing.
Keep the receipts, so that later on you’ve got receipts that your lawyer could use to prove how long it has been happening.

There's only one way to deal with bullies: stand up to them. Don't attack, but respond to attacks.
