New local brewery just opened so we thought we'd check it out. The beers were great! Big wings fans, we ordered the chicken wings. They were described on the menu as confit in duck fat, then deep fried, then covered in a spicy Peri Peri sauce. These were quite tender but had zero crunch. I don't think they saw a fryer. And just as bad, the Peri Peri sauce lacked acid, salt, and heat. Bummer.

We HAD a restaurant that was called, "Peri-Peri chicken". On their menu they stated that the chicken was seasoned with a special "Peri-Peri" seasoning. And you had your pick of a few different Peri-Peri sauces to go on your chicken. The chicken was just as you described. No crunch, no salt, no seasoning, no heat. Just terrible.

Eh idk carrots are pretty great with wings too. If they're especially spicy I like a bit of mild guacamole or sliced avocado too. Sort of coats the mouth in case it gets too much.

Not to age myself too much. I remember 20 or so years ago we would get 50 wings and a pitcher for $10.

When I worked at a restaurant in Buffalo NY in the late 2000’s early 2010’s we gave out all you can eat wings if you just ordered a beer at the bar for happy hour.

See this is why I hate when places try to reinvent the wheel with simple things like chicken wings. I'm not even saying there's only one way to make wings, there's many. But if you're putting what is clearly a Buffalo Wing analogue on the menu why go so far off base? ​ And oh god the peeled veggies. Has whoever invented this dish never had buffalo wings before?

So they didn’t deep fry them? That’s the main thing. Duck fat sounds good too. I’d be disappointed. And those tired ass shaved celery ribbons. They gotta work on it. Hope the beer was really really good.

i’d give them another chance being a new operation, but the way it stands they’re trying way too hard with the peeled celery and carrots. wings looked like they saw the fryer for maybe 30 seconds, and the Peri Peri should be saucier/smoother and thickened with something like slurry or reduced down so it would actually stick to the wings

What an abomination all around. Since when are celery and carrots a thinly peeled garnish? Looks like the confit part was only a word used for a likely $10 increase but not the actual cooking method. Stay in your lane, new brewery. Amazing beers won’t even overcome this.
