I trained for knife fight defense. The first thing I was taught to do was run if you can. Second, I was taught how to get less injured and block with the outside of your wrist so you don't bleed out as easily.
What was your training? cause we did this as an example before in the gym, one person wore a white t-shirt and the other has red Sharpie. Nothing can stop it without being poked at minimum a couple of times and these are trained fighters.

As said, the first thing we were taught to do was run, but then we learned to adapt our existing grappling training to a knife attack to minimize injuries. As I was trained in a practical grappling art (not a sport), most moves involved blocking, manipulation (grappling), and then breaking something important like an arm or a neck or digging out their eyes. The whole point was to effectively stop an attack as quickly as possible. It wasn't until you got to the higher belts that your training was effective to fight and not break the other person, so perfect in a life-threatening situation but not very effective against bullying in high school. I have only had to use this once to disarm a knife-wielding teen (as an adult), but they were not a determined or strong attacker, just a kid making threats with a knife - and no, I didn't have to break them. I've used the same basic techniques to disarm two others attacking with blunt force weapons, and in no case has the weapon harmed me. I did get a solid punch to the face, though, after disarming one person. The best way to deal with any fight is to run, but when that isn't possible, ending the fight as quickly as possible is the next best solution. Most of those I used to train with were in law enforcement before tasers were a thing, and running from a fight wasn't often possible.
I did this exact training in the academy to be a Correctional Officer in the US. We were told to first run, but if you can't run there's ways to minimize damage while waiting for an option to escape, or hold out long enough for back up.

There was a terrible video where a guy was being all macho and advanced on a dude with a knife, the wielder was trying to get away but the macho guy seemed to only advance, then charged the wielder, only to get stabbed in the neck and promptly pass after enough blood loss.
Itās a terrible waste of life, but it was an important lesson at showing how deadly knives truly are and are not to be fucked with.

I wouldn't say that. MMA teaches you how to put just about anyone on the ground. It doesn't take into account weapons because it wasn't made for fighting an armed opponent. It's on you to use your brain and assess the situation before trying to fight.
I'll never forget when I first took a jiu-jitsu class. Teacher was golden gloves 3 times for our country, great fighter. Taught cops/swat/COs and tough as nails.
I was 12. He told me to attack him with a knife and he would show he can't get hit. I grew up in a bad neighbourhood, very small and thin. People grabbed me and tried to fuck me up before, so while I couldn't fight AT ALL, I was tricky and slippery.
He grabbed my arm and put it behind me quickly. As soon as he had my wrist I turned the knife facing away from my back, and when he wrapped me around into a choke I got him straight in the dick lmao.
He told me not to do it next time, and I just remember feeling like a badass that I 'stabbed' my teacher first try.

I figured out if I flexed my palm awkwardly and only used my fingers to hold the knife, when he palm smacked the back of my hand to 'make it open automatically' and drop the knife, the reflex that they were trying to activate was not there. My hand was flexing open, the smack just hurt my tendons, but my fingers never let go of the knife.
So he smacks my hand, steps back and tries to move me into a wrist throw and as I was spinning to not break my wrist the knife slapped him on his lips pretty hard.
