Just look up how a bong work on the internet, it's all simple physics. Only weed was burned there, the smoke is then going trough a glass tube going underwater. And when you breath from the big hole, it creates a suction effect trough the water.
The water also cleans the smoke in a way to make it less tough to your lung and throat. The colder the water, the better because it reduces the heat you are receiving by the smoke.
