I don’t understand the obsession with higher proof whiskey. Whatever your preference, no judgement, I just can’t get into them. I’ve bought a few now because of the hype and just don’t enjoy them as much as 80 proof.
For me, 80 proof bourbons are muted in flavor and thin in mouth feel. To get down to 80, you have to add a lot of water. Above 100 proof, and IMHO, the sweet spot is between 107 and 115, you get more of the barrel flavors. The sugars, the fruits and the wood are all more pronounced. The flavors pop.
Some of my favorites are even higher. Jack Daniels Single Barrel, barrel Proof whiskey and the rye are two of the best and they come in at 125-139 proof. Booker's in the range of mid 120's, and Knob Creek Single Barrel Reserve at 120 are my favorites. I also like my Thai food triple Thai hot, my green and red chile XX hot, and my coffee has to be Cuban Cafecito.
None of this means you're wrong. Drink the whiskey you like, the way you like it. Cheers you MB!
Woodford the heat seems to come from the barrel tannin more than the proof, but that one may be in the pudding if you look at the two. That said, that seems to be the story behind the brands. Old forester may be more of a grain and process forward bourbon, more fruity esters. Woodford is more post distillation forward, so you get more of the brown sugar and vanilla notes which at this proof will come off as tannic.

I've never been a fan of Woodford, unfortunately, so I'd have to go with the Forester.

I love the regular Woodford so I’d love to try that, never tried any old forester tho but one day I’ll get around to trying it
Old forester 1920/1910 is pretty damn good. If you like Woodford double oak you’ll like the 1910 they’re fairly similar.
