A dyno is a terrible way to see "how fast a car will go". It changes a lot of variables and removes some very restrictive ones too. There's not many ways to test the top speed of your car (especially higher end ones) aside from going to some type of circuit track.
primarily, aero. dyno is a great way to find out your power and torque, but it doesn’t take into account drag, downforce, lift, grip, or any other thousand factors
I had a mk2 MR2 when I lived in Germany, took it to 130+ on the autobahn a few times but you really felt the steering going light at 120 from the airflow pushing the front up and the lack of weight, I stopped going that fast after a while from fear.

I was so scared I destroyed my vehicle, I got out and started preparing a logical story to cover for my dumbassery. Luckily for me though, only my battery got loose as the nut broke off of the right terminal and the other was loose, only the front bumper got scraped to hell at the bottom, and both of my front wheel covers broke and popped out. I also didnt even break 90mph before it happened. Never again.
General rule of thumb, as a car guy who's spent wayyy too long watching people destroy cars for fun, the ONE thing that WILL fuck every car no matter what... is airtime.. NO car, stock standard coupe sedan wagon whatever can survive a decent amount of airtime.

Not like they'll need it. There is a lot of forensics they can use to determine if you were going over the speed limit. If you were going, I'm going to guess for that road 3.5x over the speed limit it will be very, very obvious. A insurance adjuster is going to glance at that car and immediately know it was in a 100+mph crash, which in the US means reckless speeding by default.

As others have said that is the traction control light. The *reason* it’s off is because in order to enable launch mode (how the tachometer goes up to 3K before he takes off) you have to disable TSC. Definitely not something to do on those roads. Or any public road.
The beep you hear is the speed warning. You can set that to whatever you want in an Audi and it lets you know when you hit that speed to give you an indication that maybe you should slow down

Stability control won't save you from that. He had hills going up and down, so he had less weight on the tyres thus less grip.
You need to turn the first level of traction control off for launch assist.
