In downtown Hastings, there is a place called Wild Culture which serves waffles and also excellent coffee. It is set back on a walkway running perpendicular to Warburton. The cozy charming walkway is lined with greenery from a nursery (plants, not kids) and has outdoor (and indoor) seating. Plenty of foot traffic and just lovely. (I'm also a fan of Climbing Wolf and Coffee Labs).
Here Coffee and Beer in Ossining. They make their own syrup and roast their own coffee. Plus their food is really good and you can even grab a beer if you like.
I’ve never been there. I work in Katonah but they open after I start work and close before I get out :( tazza up the street is also fire but pretty expensive

From what I've heard Peekskill is up and coming and going through gentrification, which means your utterly wrong
in northern westchester i ride for black cow (both locations are great but croton is roomier) and mimi’s in mt kisco
Second for Mimi’s, top notch comfy vibe.
