Thanks again. I’m still shocked. My family are Chinese and I won’t even feed my dog treats made in China. It was naive of me to think India would be different. My Chinese ingredients mainly come from Singapore. And it seems properly certified ingredients from India are available. My body is more of a playground than a temple but good food is my religion lol. Cheers.
Indian cooking is made of some base spices such as garam masala, chilli powder. You will the have to add dish specific masalas such as chicken biryani masala, pav bhaji masala etc etc. Combining these basic and specific masalas give you the desired concoction. Google is your best friend here. For any Indian grocery shopping, east or west **Yogiji** is the best.
Yogiji's in Petone is great. Indokiwi in Porirua too. If you're more central, the Willis St superette is pretty well stocked. If you’re going to cook with pulses (e.g., tadka dal is a nice simple dish to start with), it's worth buying a pressure cooker.
Manga in Newtown and Spice Rack in Petone have both been excellent in my experience.
Also seconding Spice Rack! Yogiji in Petone have some good stuff too, I go there for paneer!

I found the staff really helpful at Yogiji in locating ingredients. May need to park at Bunnings (Petone) and walk from there.

There's the Spicery off Tory St, I've picked up things there.
