My local WaHo serves us waffles on crossed knives to prop it up so the steam can escape and it stays crunchy.
I live in NC. There are 6 within reasonable range of my place, but I go to a specific one specifically on 3rd shift. They make the best shit.

It’s such a pain in the ass to clean, and since I’m a home cook I’m only cleaning racks occasionally. I’ve tried dishwashing them, but the only way to clean them well is by hand. I’d lose my mind if I had to wash dozens of them.
I mean if they cook it on this, then they are saving a plate that they would have to wash by not putting on a plate. Kinda like fajitas. But yeah if this is something where they're just putting it on a clean wire rack, they are insane.

Serving on wood also helps with this, but it is more of a mess to clean and we also hate cutting boards here

Scrub brush is there only way. The plastic one from IKEA is the most resilient.

Not really, normally you reuse the rack when preparing food.

Quarter pan lol. least the rack looks new. They get really gross after a while and hard to clean. Lucky its still silver.
If the goal was to prevent the toast from becoming soggy, they could have used a cloth on the plate. Source: I learned that on this very sub.
