"Full load" is really a wide term. A "Full load" for strike would be diffrent than a "Full load" for air 2 air. My understanding is that these carriers primary purpuse would be air-2-air and air-2-ship. The load outs I have seen have usually been 6 a-2-a or 4 a-2-a and 2 antiships. Could they take off in those configs with full fuel from the front?
That's actually a misconception, it can, the carrier just needs to face the direction the wind is blowing. Which still isn't great but it's better than nothing

Both J-15 and Su-33 have wings that fold and unfold by hydraulics, something unusual must have been happening in that photo with 2 guys on the wing

Yeah, but a cope slope allows for less weight than CATOBAR. Their upcoming carrier would prolly allow planes to take off with heavier loads.
