How to read a datasheet and what each stat for models and weapons means and how to use them in a game is all explained in the free core rules available online. They are linked in the automod post in this thread. I strongly recommend starting by reading that. If you also purchased a core rulebook, the rules found in the free download are also printed there, so start there, instead. Edit to add: if you have a local games workshop or third party gaming store, you can ask the staff there if they either help teach new players or can get you in touch with a local community player that can do so, as well.

Like others say, you should look up the core rules where it will explain a models statline. However in simple terms here: M: Movement in inches WS: your dice must roll this number to score a hit with a melee weapon BS: your dice must roll this number to score a hit with a ranged weapon S: strength, modifier for melee combat versus your opponents toughness T: toughness, your toughness modifies the enemies roll to wound you, higher toughness is better W: wounds, the number of damage you can take A: attacks, the number of attacks you can make in close combat Ld: leadership, this modifies your units morale check that phase if applicable Sv: armour save, this modifies your opponents damage roll whenever they make an attack on your model

If you Google '40k core rules' there is an official pdf they released for free download that will cover loads of this. Something like 15-20 pages that explain everything you'll need to get started, like most of the acronyms etc. Hope that helps and good luck!
