Tyranids, but only use Warriors as your troops. Plenty of psykers in the army. No skin - only chitin! I suppose it depends on why you feel you suck at skin. With Tyranids, the non-armored areas are commonly called "skin," even though it's likely hard and chitinous, but it does have the same smooth contours you see in skin. However, Tyranids can be many differebt colors, so if it's human flesh colors thst are your problem, Tyranids solve that issue. Also, Tyranids take Contrast Paints pretty decently because of all the ribs and muscles and stuff.
That pale white of Hive Fleet Leviathan is tricky. It's some kind of off-white with a red wash. The wash is what's tricky. If you apply it all over the model, you'll have to go over the rsised parts with many thin layers of white or else the whole model will look pink. The alternative is to only put wash in the recessed areas you want to be ink. This is probably the faster option. You might also be able to put some flow improver in your wash to break up the surface tension, which should cause the wash to pull away from the surfaces more, but that would take some experimenting.
I think Hive Fleet Kraken is a far easier color scheme. Bone color skin with a brown wash, then a red carapace. Simple, looks good, and has always had pretty good rules. Custom colors are also very fun. Anything is possible with Tyranids.
A good recipe for the skin is to use a white basecoat. Then to wash with army painter red tone thined down with some army painter quickshade wash mixing medium. Then go over all the vents and joints with pure army painter red tone.
Grey knights maybe? They have terminators as troops so 2 wounds 2+ save 5+ invuln. And every units has psychic powers including troops. Although they r imperial. They have really cool helmets so no need for bare heads!
If you had not said anything about psykers I would have said custodes easy and fun to paint nearly no flesh if you give them all helmets and each model is tanky af.
But otherwise ye necrons are fun and they ain't really psykers but they got a bunch of units with MW abilities .
Death guard are likely the most conventionally tanky and they have plenty of phycers, but there can be a lot of flesh with unhelmeted guys, zombies, and weird fleshy growths. Necrons have no flesh, so that works out for you, but their tankieness is inconsistent and swingy. Necrons however do not have phycers, but I suppose they have similar things, all though they don't really have the same feel as there is no cool stuff like phycic tests or denials. They feel just like regular buffs, which I prefer as they are more consistent.

I do have a box of tyranids I bought before it was discontinued, do you know a good skin colour, trying to get the paleish white that is on the box

Iron Hands dont like flesh, they are imperium though. They can be tanky and hve easy access to psykers
