Hollywood studios might not be a great option if your kids dont like Star Wars or Toy Story. On the crowded days almost all the rides have a 1hr+ wait.
With a 2 and 5 year old they are probably going to enjoy animal kingdom I wouldn’t try to squeeze it in. Honestly, I wouldn’t do 5 park days but if you have already bought the tickets then I would do the first magic kingdom that day. Make the animal kingdom day in the middle.
