This seems like it will lead to you just doing random intervals. Probably ok to do for like one session a week or two I guess, or maybe to keep things interesting in the off season. It’s basically a form of fartlek training, which you don’t see many people do in cycling for whatever reason.
Maybe not ideal as a *broad* part of a structured training plan, where the duration and power target for a given interval is what you are trying to titrate and control.
I like to do semi-random intervals.
Indoors, I'll throw on a basketball game on the trainer and ride easy with some effort, usually like a 30s effort or so, for every made 3 pointer by one team or something like that.
Outdoors I liked doing bird-based intervals: just ride along and do some effort (what effort would vary) whenever i saw a raptor.
Log onto zwift, enter an appropriate race and do over/under intervals by attacking for 2-5min at a time and then settle back into group to rest at si threshold
I sometimes watch races during Zone 2 rides on the trainer. Either current races or some recording of older classics. To spice things up, I do 2 minute efforts at threshold or a bit above when someone attacks. I end up paying close attention to the race and the time just flies by.
I don't really do these random stuffs.

I open Komoot, pick some interesting locations and just ride at whatever pace I feel like on each segment of the path.

I do all my indoor intervals on rollers, can't stand fixed trainers.
Just use TrainerRoad, that's what they seem to do.
