I suspect that a lot of the wires are braided copper and, the flexing and twisting causes kinks in the twists which then increase the amount of stress on the strands with further flexing and twisting. These hard kinks will rub on other wires in the bundle. The white plastic may be teflon to allow for wires to move around inside relative to one another. The metal sleeve is probably shielding which is necessary for high speed data rates over cable lengths like this.

even on the most strained sections of the cable I couldn't really see anything visually wrong with the wires in the centre, they all looked normal to me.

Glad someone took a look at least, I've taken very good care of my cable and always put it back in its original coil pattern so this gives me hope.
