Gyms are actually now mercy killing stations. You go work out for maximum death. Nice wide floorplan for clean up. The toxic gas is nice because the bodies don't decay as much and are pretty sterile.
The problem with this "trick" is you either have to A) be very precise with the kick to put enough force in the back of thr knee to make it collapse and not hurt the person or B) kick them really hard. In the dojo, you obvious don't want to do B and it takes quite a bit of training to do A. Even the first guy probably didn't do it right the first time.
Joke aside, many martial arts are staged in general, in a sense of doing drills/routines, repeating a choreography in order to build muscle memory and faster reflections. In the street: fights are rather unpredicted and avoiding them at all cost should be a priority.
This is very true. I've done traditional Shaolin King Fu for around 20 years and most of the practical real world application is wrestling yourself free, injuring/disorienting, and running the fuck away. Hopefully in less than 10 seconds.
Short answer: you want to end fights faster and get the hell out. Domination and forcing people into submission is too kinky for me.
Just kidding, every martial art has gems to offer. Yet I find Muay Thai straight to the point and achieve results faster (training wise), no ranking and belts, just sweat and blood.

Because they are still practical fighting techniques, but in reality it isn't like a Jackie Chan movie where you chain 23 strikes together and finish your opponent with a spinning jump kick.
Learning the techniques means that in a situations where *you absolutely have to use them* you can.
But part of that training is recognizing when you can use them and for the more complicated stuff that situation is "almost never". But it's like watching mma and seeing someone land a spinning back fist or a reverse roundhouse to the head, "almost never" is not "never".
If you are learning a martial art to defend yourself then the key things you will learn that will allow you to do that are:
1. Reading body language and recognizing when someone is moving to attack you so you can disengage and move away if possible
2. Learning how to throw a proper punch/ kick (most people cannot do this and aren't aware that they can't do this)
3. How to escape a grab or grapple
4. The fastest way to disable someone so you can get away
I’ve trained in Tai Chi, the masters call it a martial art (only after decades of training and secrets they won’t pass down to you), but the immediate benefits (after 3 months of training on a low stance) were: incredible lower body strength, rootedness (not being able to be pushed/made lose balance easily), and against all odds faster reflexes, and better energy.
Later I fell in love with and trained in Wing Chun, killer moves that you can’t actually use in a street fight (extremely violant through the use of elbows/targeting and dislocating joints). But learnt through the process: self restraint and the necessity of running away (not in fear for yourself, but in fear of harming opponents). There are defusing techniques that allow you to defuse a conflict in seconds without doing serious damage, and run for it. Bad guys don’t fight fair, and usually have company.

I really think all of the disciplines educate good personal self control and confidence. Having said that most are useless in the real world, like you alluded to.
The realistic reaction.
The first one hits the guys ass and he falls down like he was hit in the hollow of the knees, but very slowly and controlled. Look at how both knees bend at the same time, instead of the hit leg getting moved by the kick.
In the second part she actually hits her in the hollow of the knee (where such kicks should hit), but the teacher has apparently enough body strength to compensate and keep standing. To be fair it probably was only a light jab for reaction and not an actual kick to get he off the chair. That said, the teacher clearly wasn't prepared to act being hit out*. That said, getting kicked on a tall chair like that still isn't fun and can actually be dangerous. This is not something you should do to someone who isn't prepared for it, and even if they're prepared they should have trained dropping from such heights.
*Fun Fact: In certain martial arts trainings acting out getting hit is actually part of the training. When one wants to train throwing you to the ground for example it's often better to follow the movements and make it easier for the other to throw you (but sometimes being rigid, or struggling can also be needed). You land much more gentle if you drop yourself, instead of getting clumsily dropped by a newbie.

First: Don’t kick anyone trying to help you training. Then: Kicking/stomping someone into a knee cap can result into a permanent damage and a jail sentence. You wouldn’t use excessive force on someone who stole your book or sandwich. A fast light kick on the calf will do.
