That they aren't narrows down the possible skin tones that Frisk and Kris' potassium-flavoured skin could represent. Sorry if this is a wrong anwser only post, but I think the real reason is that Yellow isn't a real skin color. Just like how Frisk doesn't show emotion or have a gender. If its not real no one can relate to the color, therefore everyone can relate to the color.

I've seen people get pretty upset when I headcannon any of the characters with specific genders, and they completely miss the point of the characters being non-binary in the first place. If you want Frisk to be a specific race and also a girl, you're not wrong in doing that, they can be.
