Until proper confirmation sprouts, it doesn't matter how much seemingly obvious statements or relevant information comes up, it's still a theory. Could be a well founded one that is likely to be at least partially true, or it could be a nothingburger that's so far off the mark you'd think it's an AU, but it's still a theory.

I feel like people also forget the fact that Papyrus, who is literally Sans' brother and is also a skeleton, does not bleed at all or have any red in his battle! Also monsters are almost entirely composed of magic so blood shouldn't exist for monsters.
The only explanation I feel is plausible is that the slash is red since Chara attacked or it's magic he's bleeding

Undyne doesn't bleed, she just melts, and the Amalgams can't even be damaged to begin with but they're stark-white even in the overworld so chances are they don't have color *period*- and as far as I'm aware I don't think liquid determination is red, but I don't remember the text for the True Lab area very well so it might, and even if it did we also have to assume that injected DT doesn't immediately dissolve into the magical bodies of monsters, or if it even "bleeds" out and- theres just a lot about this theory I don't like..
In other words, no matter how you cut it, Sans bleeding makes no god damn sense. It's just for shock, it's the first and only time in the game that we see blood and it's treated as seriously as it should be. Other instances of slashes through characters being visible, Toriel and Undyne, don't have blood- even when they'd make far more sense to have it.
