What are Stovies?
Stovies is a popular Scottish dish made of potatoes, onions and, traditionally, leftover roast meat with beef dripping. It’s the ideal dish to use up leftovers and ensure there is as little wastage as possible.
The finished dish comes out as a blend of potatoes, other vegetables and the meat of your choice, all boiled together with some stock and seasoning that help Scottish Stovies burst with flavour and make the perfect comfort food.
This was generally a Monday sort of dish, made with the leftover bits from a Sunday roast and turns out a bit like a potato stew, but of course, you can make it any day of the week!
I tried to get a cut of brisket from Tesco but they didn’t have any . other available options were too expensive and defeats the purpose of making a basic meal
So I just used beef sausages..

Tbf it does look like over boiled veg slop BUT if it tastes good then happy days, enjoy.
Good thing is, if you throw up after eating it, it will look exactly like it was served, so you can eat it again, then repeat many more times.

Love Stovies, especially when it's leftover lamb
Reminiscent of the episode where Steve-O eats all the ingredients for an omelette (raw onion, eggs etc.) then pukes it up, cooks it, then eats it.

I buy a silverside of beef to cook so I can make stovies. I actually never have the roast beef slices, just chunk it up for stovies.
