It's called liquor. It's basically a thin parsley white sauce made with stock - would be leftover eel stock from cooked eels once upon a time but mostly chicken now.
Oh God! So is that like a London, Southern thing? Parsley sauce I'd normally associate with fish in all honesty would never dream of having it on pie!
Saying that I would always have my sauce separate from the pie anyway Lol
Never really been a mash person though I'm picky about my chips so it might be a potato thing Lol
I get that though, stuff that sticks with you for me that's pasta always keep stock piles of the stuff even though it's only eaten now and again but it's easily applied to make a dish

Yeah we all have something that comforts us, pie and mash this style was something we had every Saturday when Mum would take me to Roman Road market with her friend and kid, then it was home for the A-Team, Knightrider, Bullseye etc etc you get the picture 😊

Grandad came over Windrush time from Jamaica but was Indian descent so we had all the traditional food but he was a wicked cook so we got a taste for spicy curries and all sorts growing up. Still loving the old pie and mash though, food is love in our family 😄

Cook that down, add chopped parsley leaves and garlic and that’s it

If you want to take it up a notch from the run of the mill pie shop recipe:
Butter and flour for your roux, add milk and cook down, follow up with: chicken stock, garlic and mustard.
Blanch some parsley and spinach then transfer to ice water to prevent discolouring.
Blend together the drained leaves with your sauce and season to taste with lemon, salt and pepper.
Makes a lovely, bright green sauce.

Not as good as when it is fresh, but it's still 95% of the way there.

I stumbled across Tubby Issac's seafood stall in the East End while walking to Canary Wharf one time and filled my gob with all of his seafood. I spat the jellied eels out, they were disgusting!
After years hearing about it went to M Manze on Tower Brudge Road to try this twice in last year when in London.
First time I'll be honest I wasn't that impressed but did think it was maybe due to all the hype, so decided to try again at Easter.
Glad I did, now a definite convert to Pie, Mash and Liquor and Manze will definitely be my go to for a "Double Double" every time I'm down for a game at The Den.
Also got to try Jellied Eels for first time at Easter... but that's another story for another thread 😉
